This spectacular cut of meat is sure to be a show stopper! Hand cut in store by our experienced butchers, the Fiorentina, also known as Bistecca, is a superb cut of meat with varied texture and flavour. It is made up of a sirloin on one side, with the t-bone in the middle and a tenderloin on the other side. As well as the dramatic presentation the bone gives this piece of meat, it also assists by transferring the heat during cooking and retaining the moisture in the centre of the steak. It is best cooked by roasting whole or throwing on the BBQ.
This piece of meat has been dry aged in store for 35 days to add tenderness and depth of flavour.
