Goose have a higher fat content (than duck), most of which is under the skin rather than in the meat. During cooking, this fat melts and bastes the breast, keeping it juicy.
Defrost in fridge 2 days before cooking. Take the goose out of the fridge 2-4 hours before cooking to ensure it’s at room temperature.
